For travellers who seek the finest that the world has to offer

Where to find the world’s first and only Michelin-starred ice creamery

Minimal is a groundbreaking dessert house serving up a seven-course seasonal menu.

When speaking of fine dining and Michelin-star restaurants, ice creameries are not the first establishments that come to mind. It’s unsurprisingly, really, given that no such dessert bar has ever been awarded the accolade – until now, that is. Tucked away on Lane 133 off Meicun Road in Taichung is a blink-and-you’ll-miss-it concrete facade in a palette of black and grey. Yet, behind this wall is the world’s first and only Michelin star ice creamery, Minimal.

The world’s first and only Michelin-starred ice creamery

This Taiwanese dessert bar is a study in industrial minimalism, all stainless steel, roof trusses, timber and exposed concrete beams. Undertones of wabi-sabi are evident in the design and the culinary concept. Plating up a seasonal seven-course menu of frozen sweets and imaginative treats, Minimal presents dishes upon refined tactile ceramics that support the gourmet concept.

Promoted from Bib Gourmand to one Michelin star in 2024, Minimal specialises in edible creations made from ice and ice cream, utilising a variety of flavours, textures and layers to create visually pleasing desserts that delight the palate. Minimal is the sister to Michelin-starred restaurant Sur- and is helmed by Sur-’s former pastry chef, Arwin Wan, who oversees a regularly changing menu, from gelato and granita to sorbet and nitro-style ice. Each dish is named after the temperature at which it was created, from incredible sub-zero numbers to just above freezing.

What to expect at Minimal

While the restaurant offers a takeaway option, the recommendation is to make a reservation in the 20-seat restaurant for one of Minimal’s two daily seatings at 1pm and 4pm for an authentic experience. Flavours range from Asian classics to local specialities, including yuzu, magnolia, red plum, moroheiya, osmanthus, rum, walnut, green tea varietals and even pine needle. Meanwhile, visiting gourmands can expect textures that melt, crackle, slide and dissolve in the mouth.

The Michelin inspectors who awarded the star said:

“We were quite impressed when they were awarded a Bib Gourmand. Since then, we’ve noticed that they’ve continued to improve their techniques, refinements, and menu structure. The meticulous flavours, delicacy, and mature, skillful techniques all impressed us and reached a higher level, warranting a MICHELIN star.”
